3/4 c. sugar 2 tbsp. flour 1/4 tsp. salt 2 c. milk 3 eggs, separated 1 tsp. vanilla 1 lb. pkg. vanilla wafers 6 med. ripe bananas Mix flour, salt and 1/2 cup sugar. Put it in top of double boiler and add milk slowly. Stir constantly until thickened. Uncover, cook 15 more minutes. Add beaten egg yolks into mixture, return to heat and cook 5 more minutes. Remove from heat; add vanilla. Line 1 1/2 quart dish with wafers, then bananas, then custard. Last layer needs to be custard. Make meringue of egg whites and put on top and brown lightly. |
