1 c. sugar
6 tbsp. cornstarch
1/2 tsp. salt
4 c. milk
6 egg yolks, beaten
2 tbsp. vanilla
In a large (3 quart) glass bowl, mix sugar, cornstarch and salt. Pour some of the milk into the egg yolks. Blend well. Add remaining milk and egg-milk mixture to dry ingredients. Blend well. Microwave on high, whisking every 2 minutes until mixture begins to thicken at edges of bowl.
Continue cooking, whisking every minute. Mixture will thicken and bubble all at once. Whisk and cook 1 more minute after pudding thickens. Blend in butter and vanilla. Immediately pour into small serving dishes and cover with plastic wrap.
