CAPTAIN MORGAN'S RUM - GINGER COOKIES
 

1 c. sweet butter, softened
1 c. confectioners' sugar
2 1/2 c. flour
Pinch of salt
3 tbsp. crystalized ginger, minced
1 tsp. ground ginger
1/2 c. dark rum, Capt. Morgan's spiced rum, if desired

In large bowl, cream butter and sugar. Add remaining ingredients, shape dough into round 2 inch diameters; wrap in plastic. Refrigerate 2 hours or freeze for 45 minutes. Slice dough 1/4 inch thick. Bake at 400 degrees for about 12 minutes or until edges brown lightly. Cool.

Makes about 6 dozen.
