OLD FASHIONED TEA CAKES
 

1 egg
2 1/4 c. flour, sifted
1/4 c. buttermilk
2 tsp. baking powder
1 c. sugar
1/2 c. butter
1/4 tsp. salt
1/4 tsp. soda

Cream butter and sugar together. Add unbeaten egg. Beat well. Sift flour, salt and baking powder together. Add soda to milk. Add dry ingredients and milk alternately to creamed mixture. Make a very soft dough and place on floured cloth. Roll to 1/4 inch thickness and cut with 2 inch cutter. For flaky teacakes pinch off portions of dough and flatten with hands. Bake at 375 degrees until light brown.
