LEMON OR CINNAMON GINGER TEA
 

1 inch knob fresh ginger
4 cups cold water
1 cinnamon stick (optional)
yellow peel (zest) of 1 lemon (optional)
sugar, honey or agave syrup, to taste

Wash and peel ginger. Use either cinnamon stick or lemon to flavor. If a whole clove is available, it can be added with the cinnamon; serve hot.

When serving the lemon ginger tea, a tablespoon of lemon juice can be stirred in; this is particularly good as an iced tea.

In a saucepan, bring to a boil. Add cinnamon stick or lemon peel (not both), if using. Reduce heat and simmer for 15 minutes.

Sweeten to taste with sugar, honey or agave syrup. Serve hot in cold weather, or over cracked ice in hot weather.
