Brown sugar and whipping cream blend into a delicious caramel flavored sauce when cooked. For extra appeal, spoon some over each serving of baked apple.
4 lg. tart apples (such as Pippin, Granny Smith, Rome Beauties)
1/2 c. firmly packed brown sugar
1 tbsp. each raisins and chopped nuts (optional)
Ground cinnamon
1/3 c. whipping cream
Core apples and peel off skin from top half of each apple. Arrange in an 8 inch round baking dish. Partially fill center of each apple with brown sugar; then stuff with nuts and raisins, if desired.
Add more brown sugar to fill centers. Spoon any remaining brown sugar into bottom of dish. Sprinkle each apple lightly with ground cinnamon. Then drizzle whipping cream slowly over apples, pouring some into the brown sugar in each core.
Cook uncovered, in the microwave on High 8 to 10 minutes until apples are tender when pierced with a fork; turn dish 2 or 3 times. Transfer apples to individual serving dishes.
On High cook remaining brown sugar and whipping cream without a cover 1 1/2 to 2 minutes or until mixture boils vigorously; stir well. Spoon sauce evenly over each apple; serve warm. Makes 4 servings.
