GERMAN POTATO SALAD
 

3 lb. potatoes
6 slices bacon
1 c. mayonnaise
2 tbsp. vinegar
2 tbsp. sugar
1/4 c. finely chopped onion
Salt & pepper
Parsley

Boil 3 pounds potatoes in their skins until cooked but not too soft. Peel and slice into a large bowl. Cut 6 slices of bacon in small pieces. Cook in skillet until crisp. Reserve bacon and bacon grease. Prepare dressing of 1 cup mayonnaise, 2 tablespoons vinegar and 2 tablespoons sugar; mix well. Mix potatoes, onions, dressing, bacon and 1/2 of the bacon grease. Season with salt and pepper. Add parsley. Serve at room temperature.
