SPAGHETTI WITH SAUSAGE AND ZUCCHINI
 

1 lb. Jimmy Dean sausage
2 cans condensed cream of mushroom soup
1 c. milk
4 or 5 c. zucchini (about 1 1/2 lbs.) quartered and sliced
1/4 lb. mushrooms, sliced
1/4 c. sliced green onions
1/2 tsp. salt
1/4 tsp. pepper
1 lb. spaghetti
Parmesan cheese

Brown sausage in large skillet. Break up with fork. Add zucchini, mushrooms, green onions and saute a few more minutes. Stir in soup, milk, salt and pepper. Cook over medium heat 15 minutes or until zucchini is tender. (Add more milk if the mixture becomes too thick.)

Cook spaghetti. Drain. Toss sausage mixture with cooked spaghetti and sprinkle generously with Parmesan cheese. Serves 6.
