2 tbsp. bacon drippings or cooking oil
4 to 5 lbs. chuck roast or 3 1/2 to 4 lbs. ribs
1 1/2 tbsp. butter
1 med. onion
1 1/2 tbsp. Worcestershire sauce
1 1/2 tbsp. vinegar
2 tbsp. brown sugar
1 1/2 tsp. dry mustard
3/4 tsp. salt
3/4 c. water
1 c. chili sauce
Dash of Tabasco sauce
Several drops liquid smoke flavoring (optional)
Heat drippings from bacon or oil in a heavy skillet; brown meat on all sides.
Prepare sauce: Melt butter in saucepan; brown onions. Add remaining ingredients. Simmer for 10 minutes.
Preheat oven to 325 degrees.
Place meat in baking dish; pour sauce over meat. Cover; cook in preheated oven for 2 1/2 hours or until tender, basting several times. Serves 6 or 7.
