Marinate an eye of the round roast in Italian dressing overnight. Sear the roast on all sides on the grill. Turn grill to very low and cook for 45 minutes with lid of grill open slightly. She props hers with a rock or brick.
Take meat off grill, rub all over with butter, wrap in aluminum foil and let sit for 5 minutes. Carve and serve. (Comes out medium no matter what size roast you use.)
