ROAST BEEF
 

Remove roast from refrigerator in a.m., bring to room temperature. Preheat oven to 375. Prepare roast, garlic, salt, pepper. Cook roast for 1 hour, turn oven off, leave roast in oven for 3 hours. DO NOT OPEN OVEN DOOR. Turn oven back on to 375 for 20 minutes.

Works great for any size or type of roast beef. It will be medium to medium rare. Rolled or rib roast works well, not for pot roast.
