BAKED VEAL CUTLETS
 

1 1/2 lbs. veal cutlets
4 egg whites
1 c. bread crumbs
Salt and pepper to taste
3 tbsp. grated Parmesan cheese
3 lg. onions, sliced
1 lb. can peeled tomatoes

Combine bread crumbs, salt, pepper and cheese. Dip cutlets in beaten egg whites then coat with bread crumb mixture. Spray baking dish with non-stick spray. Place half of onions in bottom of dish. Arrange cutlets on top of onions. Mash tomatoes and spread over cutlets. Top with remaining onions. Bake at 375 degrees for 40 minutes or until veal is tender. Makes 8 servings. 1 serving = 201 calories or 2 med.-fat meat, 1/2 bread, 1 vegetable.
