BAKED LIVER AND ONIONS
 

1 1/2 lbs. beef liver
1 1/2 c. seasoned flour
Bacon fat
6 med. onions
4 slices crisp bacon
1/2 c. hot water

Fry bacon, drain and crumble. Set aside. Dip liver in seasoned flour, saute in hot bacon fat until slightly brown. Place in greased baking dish. Cover with onions, seasoned with salt and pepper, sprinkle with bacon. Add hot water, cover. Bake at 350 degrees for 30-40 minutes. Adding more water if needed. Remove cover last 10 minutes.
