FRUITED POT ROAST
 

4 lb. chuck roast or pot roast
2 tbsp. butter
1 1/2 tsp. salt
1/8 tsp. pepper
1 c. apple juice
1 c. dried apricots
1 c. pitted prunes
1 c. tart apples, pared and sliced
2 cinnamon sticks or 1/4 tsp. ground cinnamon

Brown meat in butter. Pour off the drippings. Season with salt and pepper. Add the apple juice and cinnamon. Cover and simmer in Dutch oven (or bake at 350 degrees) for 2 to 2 1/2 hours or until tender. Turn meat over and add fruit. Continue cooking for 30 minutes or until apples are tender. Serve on a warm platter.
