Preheat oven to 450°F or 230°C.
Roll pastry into a rectangle 40x30cm (16 inch X 12 inch). Arrange thin slices of meat over half the pastry, add salt and pepper.
Place cheese on top of meat, sprinkle on onion if liked. Fold other half of pastry over the meat and seal well. Make several slashes in the top pastry to let out steam.
Place on baking paper on oven tray and bake about 25-30 minutes or until pastry is well risen and brown. If meat is not really thin, turn oven down to 350°F and cook 10 minutes longer.
Small, individual pies can be made instead. Great for a fast meal for hungry teenagers.
