CHOURICO AND PEPPERS
 

1 green pepper
About 1/3 c. water
1 lg. can stewed tomatoes
1 sm. can tomato paste
1 sm. onion
3 lbs. Chourico
1 lg. can tomato puree

Chop green pepper and onion and simmer in water in frying pan until tender. Add cut up (chunks) chourico to frying pan and fry until partially cooked (about 20 minutes to 1/2 hour on low to medium heat).

While above mixture is cooking, add all other ingredients to large pan on low heat on stove or in crock pot on low and let simmer. When chourico mixture is partially cooked add it to sauce and let simmer for 4 to 6 hours on low.

(NOTE: The crock pot method is much better than the stove top method. Mixture can be refrigerated and reheated several times.)
