4 hard cooked eggs 1/2 lb. Ricotta cheese 1 tbsp. grated Parmesan cheese 1/4 tsp. salt 1/8 tsp. nutmeg 1/8 tsp. pepper 1 tbsp. flour 1 egg, lightly beaten 1 c. bread crumbs Cut eggs in half and remove yolks. Mix yolks with Ricotta, Parmesan, salt, pepper, and nutmeg. Fill hard cooked egg whites with yolk mixture and shape so each half looks like a whole egg. Roll in flour, dip into beaten egg, roll in bread crumbs, and fry in deep oil until golden brown in color. |
