FISH-CRABMEAT ROLLS
 

2 lbs. flounder fillets or orange roughy
4 oz. mushrooms, chopped
3 tbsp. onion, chopped
1 (7 1/2 oz.) crabmeat, drained
1/2 c. bread crumbs (bread cubes may be used)
1 tbsp. parsley flakes

SAUCE:

2 1/2 tbsp. cornstarch
1/4 c. dry white wine
1 1/2 c. skim milk
2 oz. Mozzarella cheese
Paprika

Combine mushrooms, onion, crabmeat, bread crumbs and parsley. Spread mixture on fish and roll up. Place roll seam side down in shallow 10x12x2 inch baking dish.

Combine cornstarch, white wine and milk. Shake well. In a saucepan, heat mixture over low heat and stir until mixture thickens. Then add cheese and continue stirring until it melts. Pour over flounder rolls. Sprinkle with paprika and bake at 400 for 20-30 minutes.
