2 c. zucchini, grated and pressed dry
2 green onions, thinly sliced
1 grated carrots
2 tomatoes, peeled, seeded and chopped
1/2 c. mozzarella cheese
1/4 c. Parmesan cheese
Pizza sauce
English muffins

Mix first 6 ingredients, spread on English muffin (pretty hefty amount) add pizza sauce, grill under broiler.
