In large mixing bowl beat eggs; add onion, salt, black pepper, and shrimp. Mix well. Add flour to egg mixture and blend. This makes a batter.
In deep skillet heat 1 inch hot oil. Pour 1/4 cup batter for each fritter into hot oil. Fry, a few at a time, until golden brown, about 1 minute on each side.
Drain on paper towels. Serve hot with Pace Picante sauce. Serves 4-6. Makes 8-10 fritters. Make smaller fritters and they are great appetizers.
