2 tbsp. olive oil
1 lb. mild Italian sausage
1 lg. onion, chopped
1 garlic clove, minced
2 lg. (1.8 lb.) cans tomato sauce
1 1/2 tbsp. oregano
2 tbsp. parsley
1 lg. can water
Put oil in saucepan and brown Italian sausage. Remove from pan; add chopped onions and minced garlic and brown. Remove from pot and discard. Add tomato sauce, water, oregano, parsley, and Italian sausage and simmer for about 2 hours (stirring occasionally) until thick.
Chicken parts or meatballs may be substituted for sausage.
