COLD NOODLES SZE - CHUN STYLE
 

1 c. chicken meat (cooked & shredded), optional
2 c. bean sprouts
1 1/4 lb. noodles (fresh Chinese noodles)
2 tbsp. salad oil
1 tbsp. sesame seed oil

SAUCE:

3 tbsp. sesame seed paste
6 tbsp. soy sauce
1 tbsp. vinegar
1 tbsp. red hot pepper oil
1 tsp. sugar
2 tbsp. chopped scallion
1/2 tbsp. chopped ginger
1/2 tbsp. chopped garlic
1/2 tsp. brown pepper]
1 tbsp. sesame oil
1 tbsp. chopped peanuts

1. Put noodles into boiling water and cook until water boils again. Then add 1/2 cup of cold water and boil again until tender. Remove noodles immediately. Put noodles on platter with 2 tablespoons salad oil. Add 1 tablespoon of sesame oil to noodles and mix through with chop sticks.

2. Boil bean sprouts in boiling water for 10 seconds. Remove and plunge into cold water. Pat dry, place on platter and place noodles on top of sprouts.

3. Mix sesame paste with 1 tablespoon of soy sauce thoroughly. Continue adding soy sauce until all 6 tablespoons are used. Add all remaining ingredients except peanuts. Pour sauce over noodles, sprinkle on peanuts. Serve at room temperature.
