1 1/2-2 lbs. salmon filets, skin on Salt to taste 1 med. onion, sliced 1 tsp. pickling spices 1 lemon, sliced thin 1 clove garlic, minced 1 cucumber, peeled and sliced 1/2 c. mayonnaise Salt salmon. Arrange onion and lemon slices, spices and garlic in a well-greased casserole. Place salmon skin side up over the seasonings. Cover tightly and bake in a moderate oven, 350 degrees for 1 hour. Chill. Place on a serving platter and remove skin carefully. Garnish with mayonnaise and cucumber slices. Serves 6. |
