"ALICE'S" HUEVOS RANCHEROS
 

3 yellow chilie peppers
4 green chilie peppers
5 tomatoes, fresh
1 lg. onion
1 doz. corn tortillas
1 lb. Monterey Jack cheese
Eggs

Boil chilies and tomatoes until semi soft and drain. Blend for 1 minute.

In a saucepan fry 1 onion sliced in circles until soft. Add chili sauce and add cheese, sliced. Simmer for 5 minutes. Add salt to taste.

Fry 1 corn tortilla until soft. Add 1 or 2 eggs cooked over easy on top of tortilla. Add some sauce on top of eggs and 1 more fried tortilla (like a sandwich). Put more sauce on top of final tortilla. Serve with refried beans and French fries. Enjoy!
