AFRICAN COOKING: YAMS
 

Yams or sweet potatoes are grown in many sections of African. They are the basic food for many African families.

Peel raw yams and put them in a pan. Cover with a salted water and boil until tender. Drain. Add sugar and butter. Mash and eat.

Yams can also be cooked without peeling. Put them in a pan, cover with salted water and boil until tender. Drain. Cool and peel. Slice and serve. Have butter, sugar, salt, pepper and cinnamon available for dipping.

The yams can also be fried like french fries. Peel and cut yams into strips. After frying sprinkle with sugar.
