3/4 c. dry Red wine 3 tbsp. olive oil 3 tbsp. lemon juice 2 or more cloves garlic, minced 1/2 tsp. salt 1/2 tsp. rosemary 1/2 tsp. thyme 3 lb. chuck, shoulder and london broil - cubed 1 1/2 inch Mix together first seven ingredients, add cubed meat and marinate several hours or overnight, turning periodically. Then skewer meat with chunks of raw vegetables like tomatoes, onions, peppers, mushrooms, zucchini, etc. Cook over hot coals about 8 minutes for rare, 10 minutes for medium, 12 minutes for well done, turning skewers as they cook. |
