BAKED ZUCCHINI
 

Slice lengthwise the largest zucchini you have, or several small ones. Remove seeds and discard. Cut out zucchini and cube (leaving walls 1/2" thick). Saute in large skillet, 1 chopped onion, garlic, 1 package brown and serve original flavor sausage links, chopped. Pour in can of chopped stewed tomatoes, 3/4 cup Parmesan cheese. Add 1 cup Minute Rice for a heartier meal. Pour mixture into shells and bake for 45 minutes at 350 degrees. Top with enough Parmesan cheese to cover. Bake 10 minutes more. Check often so they don't over cook, as shells may become limp and leaky.
