CAT'S TONGUE
 

1 sm. chopped onion
4 cloves chopped garlic
1 tsp. chopped ginger
2 med. carrots
1 c. shitaki mushrooms
1 lb. lean meat (chicken, beef, pork or cat's tongue)
3 tbsp. soy sauce
1 tsp. sugar
1/2 tsp. MSG (optional)
1/4 c. peanut or corn oil
1/2 c. chopped spring onions

Slice carrots and mushrooms into julienne strips. Slice meat into thin strips. Heat oil in pan on high heat until steaming. Add onions, garlic and ginger and stir quickly. Add meat, stirring to keep from burning. Stir fry on high heat with carrots and mushrooms for 5 minutes. As meat gets done, add soy sauce, sugar and MSG. Lower heat and stir fry another 5 minutes. Serve with spring onions on top as garnish. Name it cat's tongue to fool Della Rackley.
