1 c. fine cracker crumbs 1/4 c. plus 2 tbsp. Parmesan cheese 1 tbsp. parsley flakes 1 tsp. salt 1/2 tsp. pepper Dash of garlic powder 2 1/2 to 3 lb. chicken, skinned 1/2 c. butter, melted Combine first 6 ingredients. Rinse chicken with cold water and pat dry. Dip chicken in butter and dredge in cracker crumb mixture. Bake at 350 degrees for 1 hour. |
