MEATBALLS: 2 lbs. lean ground beef 1 sm. onion, chopped 1 tbsp. Parmesan cheese 1 c. bread crumbs 2 eggs 2 tbsp. parsley flakes 2 sm. cloves of garlic, minced 1/4 c. milk Salt & pepper to taste SPAGHETTI SAUCE: 3 tbsp. oil 1 tbsp. parsley flakes 1 lg. clove garlic, minced 2 (29 oz.) cans tomato puree 2 (6 oz.) cans tomato paste 1 tsp. sugar 2 c. water 1 med. carrot, chopped in sauce FOR MEATBALLS: Combine all ingredients. Shape into 2 inch meatballs. Brown under broiler 3 to 4 minutes. Turn meatballs, brown 3 minutes more. Drop into spaghetti sauce and coat with sauce. FOR SAUCE: Cook tomato paste in oil until bright red tomato color turns dark red. Add other ingredients. Simmer, covered for 3 to 4 hours. Serve over your favorite pasta - our favorite is gnocchi.
