KUMLE
 

1 boiled potato, mashed
5 raw potatoes, finely grated
1 tbsp. salt
1/4 c. dry oatmeal
Flour, about 3 c.
Ham broth

Mash 1 boiled potato. Grate 5 potatoes into a colander, fine grate. Drain, save liquid. In a bowl, mix the grated potatoes, salt and oatmeal. Add and mix in the mashed potato. Pour off the clear, top part of the reserved potato liquid and add the white starch left in the bottom to the potato mixture. Add flour to make very sticky dough. Bring ham broth to high boil. Using large spoon, drop dough in broth. Cook 1 hour uncovered. Need a large kettle with enough broth to cover the dumplings well.
