BAKED HADDOCK, NEW ENGLAND STYLE
 

3 lbs. boned haddock or cod
1 1/2 tsp. salt, pepper
2 tbsp. lemon juice

CRACKER TOPPING:

1/2 c. crushed unsalted crackers
1/2 c. chopped fresh mushrooms
1/4 c. thinly sliced scallions
2 tbsp. parsley
1/4 c. butter, melted
2 tbsp. lemon juice
Salt & pepper to taste

1. Wash and dry fish.

2. Preheat oven to 400 degrees. Line or grease 13"x9" pan.

3. Place fish in pan, sprinkle with salt and pepper and lemon juice.

4. Make cracker topping, pour on melted butter and lemon juice and toss until combined.

5. Spoon over fish.

6. Bake for 30 to 35 minutes. Baste with juices every 10 minutes.

7. Garnish with parsley and lemon wedges. Makes 6 servings.
