GARDEN FRESH STIR-FRY
 

2 tbsp. oil
4 carrots, cut diagonally into 1/2 inch slices
1/4 c. chopped onion
1 lg. garlic clove, minced
3 tbsp. water
1 1/2 c. fresh pea pods or 2 (6 oz.) pkgs. frozen pea pods, thawed and drained
1 c. broccoli flowerets, cut into 1 inch chunks
1 c. cauliflowerettes, cut into 1 inch chunks
1 red bell pepper, cut into 1/4 inch strips
1/2 tsp. salt
1/4 tsp. basil leaves
1/8 tsp. pepper
1/3 c. whole cashews, if desired

In large skillet or wok, heat 1 tablespoon oil. Add carrots, stir fry 3 minutes or until crisp tender. Add onion and garlic, stir fry over high heat for 30 seconds. Add water and remaining 1 tablespoon oil. Add pea pods, broccoli, cauliflower, red pepper, salt, basil and pepper. Stir fry about 5 minutes or until crisp tender. Sprinkle with cashews.
