BAKED HADDOCK A LA CARLETON
 

1 or 2 lbs. frozen haddock fillets
4 tbsp. butter
2 eggs
1/2 tsp. salt
2 tbsp. lemon juice
1/3 c. sweet pickle relish

Place fish in buttered baking dish. Melt butter take off heat and add eggs, salt, lemon juice, and relish. Mix well and spread over fish. Bake in 375 degree oven for 30 minutes. HINT: Good with baked or mashed potatoes. Serve with a border of brussel sprouts and slices beets. 1 pound frozen fillets serves 4.
