ZUCCHINI AND MUSHROOM QUICHE WITH
ONIONS AND CHEESE
 

1 lb. zucchini, unpeeled and cut into 1/8 inch slices
1/2 lb. mushrooms, cleaned and sliced
2 onions, chopped finely
2 garlic cloves, chopped finely
1/2 stick butter
4 eggs
1 1/2 c. half and half
1 c. grated Swiss cheese
1/2 c. grated Parmesan cheese
Salt and pepper

Bake 1 (9 inch) frozen pie shell in 400 degree oven for about 10 minutes until lightly browned.

Saute together first 5 ingredients until zucchini is tender and all of the liquid rendered is evaporated. Place mixture into prepared pie shell.

Beat together eggs, half and half, cheeses and seasonings until blended. Pour mixture into pie shell and distribute evenly.

Place quiche on a cookie sheet and bake in 350 degree oven for 45 minutes or until it is set and top is golden.
