WIENERSCHNITZEL
 

6-8 pork steaks, remove bones
Salt and pepper
2 c. flour
2 c. bread crumbs
2 eggs, raw and beaten

On 3 separate plates put flour on one, crumbs on one and eggs on another. Put salt and pepper on each side of the pork steaks, dip in flour, then eggs, then bread crumbs. Cover well with each. Then fry at medium heat until brown on each side, then simmer slow for about 20-30 minutes until tender. Good with mashed potato and green beans, but you can eat it with almost anything. You can also serve it with mushroom gravy or squeeze lemon juice over them. It is very good.
