POTATO SALAD MADE WITH YOGURT
 

Low calorie and low cholesterol. 3 green onions 1/2 c. diced celery 1/4 tsp. celery seed Red wine vinegar 3/4 c. non fat plain yogurt

1. Cook potatoes in microwave. Allow to cool.

2. Cut potatoes in quarters.

3. Sprinkle with red wine vinegar.

4. Add diced celery.

5. Diced green onions and add to potatoes.

6. Add celery seed and a few drops of wine vinegar to non fat yogurt.

7. Toss potatoes with yogurt mixture.

Yield: 6 servings. 86 calories per serving. 20 gm. carbohydrates, 2 gm. protein, .1 gm. fat. Exchange List Approximation: Starch and bread: 2.
