SPINACH SALAD WITH YOGURT DRESSING
 

1 egg yolk
1 tsp. salt
1/4 c. cider vinegar
2/3 c. Hains All-Blend Oil
2 tbsp. sesame oil
1/4 c. plain yogurt
1 tsp. dried basil
1/4 tsp. dried basil
1/4 c. toasted sesame seeds or sunflower seeds
1 sm. clove garlic

SALAD:

1 bag of fresh spinach (or about 1 lb. loose fresh spinach)
1/2 lb. fresh mushrooms, sliced thin
1/2 red onion, sliced thin
1/2 lb. bacon, cooked & crumbled

Put all dressing ingredients in blender and blend until smooth. Pour into a jar and refrigerate until ready to serve. Dressing will keep for 3 to 4 days. Mix spinach, mushrooms and onion in a large salad bowl. Sprinkle with bacon. Pour enough salad dressing over salad to coat. Serve.
