STRAWBERRY JELLY
 

4 c. strawberry juice
2 pouches liquid pectin
7 1/2 c. sugar

Measure juice into a kettle. Stir in the sugar. Place on high heat and, stirring constantly, bring quickly to a full rolling boil that cannot be stirred down. Add pectin and heat again to full rolling boil. Boil hard one minute. Remove from heat. Skim off foam quickly. Pour jelly immediately into sterilized hot jars and seal. Makes 8 to 9 half-pints.
