FREEZING PEACHES
 

For freezing, peaches should be soft ripe but not mushy. Wash fruit thoroughly in cold water, preferably ice water, since this keeps the fruit firm. Peel and slice. Peel only a small amount at a time. Mix about 1 teaspoon ascorbic acid with 1 cup sugar (may be bought at grocery and drug stores - is not harmful and will not affect the taste of the fruit) and sprinkle over prepared peaches. Pack in air tight containers or jars (any kind of jars may be used just be careful in handling and do not pack more than 3/4 full) and freeze.
