STRAWBERRY - BLACKBERRY SYRUP
 

1 qt. fresh strawberries or blackberries
1 1/4 c. sugar (1 1/2 c. for blackberries)
1 1/4 tbsp. lemon juice
1/4 tsp. salt
2 tbsp. butter
1/2 tsp. vanilla

Mash berries. Force through a strainer until there is 2 1/2 cups berry juice. In a saucepan, combine juice with sugar, lemon juice, and salt. Bring to a boil, stirring constantly.

Boil 4 minutes. Remove from heat, skim off foam. Stir in butter and vanilla, and blend well. Makes 2 1/2 cups syrup. Pour into salad dressing bottles. Freezes well.
