Drain liquid from beets (there will be about 1 pint). In a medium saucepan bring to a boil the beet juice, sugar, vinegar, and spices, stirring until sugar dissolves. Boil gently for about 5 minutes.
With a slotted spoon pack beets into a quart jar. Pour the spiced liquid over them. If there is not enough liquid to cover them, add boiling water to do so. Chill for a few days to blend flavors.
