ORANGE JELLY ROLL
 

3 eggs
1 c. sugar
1/2 c. water
1 tsp. vanilla
3/4 c. flour
1 tsp. baking powder
1/4 tsp. salt
2/3 c. orange marmalade
Powdered sugar

Heat oven to 375 degrees. Line jelly roll pan with foil and grease. Beat eggs on high speed until thick, about 5 minutes. Gradually beat in granulated sugar. Beat in water and vanilla on low speed. Add flour, baking powder and salt gradually, beating just until batter is smooth. Pour into pan. Bake 12 to 15 minutes.

Immediately loosen cake and remove from pan to towel sprinkled with powdered sugar. While hot, carefully roll cake and remove towel. Beat marmalade with fork to soften, spread over cake. Roll up, sprinkle with powdered sugar. Yield: 10 servings.
