FRESH PEAR CHUTNEY
 

4 lb. pears, peeled, cored & chopped
2 1/2 c. brown sugar
2 c. white vinegar
1 1/2 c. golden raisins
1/2 c. chopped onion
1/2 c. chopped crystallized ginger
2 tbsp. mustard seed (crushed)
1 tbsp. salt
3 garlic cloves, minced
1/2 tsp. cayenne pepper

Combine all ingredients in large saucepan and bring to boil over medium heat, stirring frequently. Reduce heat to simmer and cook until thick, about 40 to 50 minutes, stirring occasionally. Pour into hot, sterilized jars and seal. Delicious served with curry or used as a spread for crackers. Makes 3 to 4 pints.

FOR CRACKER SPREAD:

Place block of cream cheese on dish and spread generously with chutney.
