KUMQUAT MARMALADE WITH ORANGE MINT
 

Kumquats are a small citrus fruit available during a short season. Their flavor is wonderful! 1/2 lemon 1/4 c. fresh mint leaves or to taste 5 1/2 c. sugar 1 box sure-jell fruit pectin

Slice into thin rounds, well washed and de-stemmed kumquats. Sift through to remove all seeds. Add juice from 1/2 lemon and sugar and pectin. Cook until at a full boil, stirring constantly. Time the boil for 2 minutes, skim off foam. Stir in mint leaves, coarsely chopped. Fill jars quickly and cover. Invert jars. Turn over again every 10 minutes, then 1/2 hour then another 1/2 hour. (Helps keep the fruit from separating from the jelly.) Makes a beautiful gift.
