CAPELLINI IN GARLIC SAUCE (TRADITIONAL
CHRISTMAS EVE DINNER)
 

1/4 tsp. salt
1/4 tsp. black pepper
1/2 c. olive or vegetable oil
3 cloves garlic
Parsley to taste
2 c. water
1/2 lb. capellini or thin spaghetti

In 1 1/2 quart saucepan brown garlic in oil with salt and pepper. Remove from stove to cool. When cool, add 2 cups of water and parsley. Bring to boil and let simmer 15 to 20 minutes.

Cook capellini al dente. Pour garlic sauce over capellini and serve immediately. Serves 4.
