PUFF PANCAKE WITH FRUIT
 

1 tbsp. butter
4 lg. eggs
1 c. milk
1 c. unsifted all-purpose flour
1/2 tsp. vanilla extract
4 tsp. ground cinnamon
1/4 tsp. each ground allspice & nutmeg
1 c. strawberry pourable fruit or syrup
4 c. assorted fresh fruit, cut in bite size pieces

Strawberries, bananas, apples, pears.

Melt butter in 9" pie plate in 450 degree oven for about 5 minutes. In a medium bowl combine eggs, milk, flour, vanilla, 1/4 teaspoon cinnamon and 1/8 teaspoon each allspice and nutmeg; mix well until batter is smooth and creamy.

Pour batter into pie plate; bake, uncovered, 30 minutes or until golden and center is dry (pancake will form a well in the center and edges will puff up).

In small saucepan combine strawberry syrup, 1/2 teaspoon cinnamon, 1/8 teaspoon each allspice and nutmeg. Mix well. Simmer over medium heat for 5 minutes. Toss half of the syrup mixture with fruit and place inside pancake; serve remaining syrup on side.
