FANCY FRUIT PIZZA
 

1 (18 oz.) pkg. Pillsbury refrigerated sugar cookie dough
1 (8 oz.) pkg. cream cheese
1/3 c. powdered sugar
1/2 tsp. vanilla
Fresh fruit - peaches, pineapple, mandarin oranges, strawberries, bananas dipped in lemon juice
1 c. apricot preserves or jam
Whipped cream (optional)
1 can crushed pineapple, drained (optional)

You may use canned fruits if you want, but fruit must be blotted on paper towel to remove as much moisture as possible.

Slice cookie dough into slices about 1/8 inch thick. Line on ungreased 14 inch pizza pan with slices overlapping slightly. Bake at 375 degrees for 12 minutes. Cool. Blend together cream cheese, powdered sugar, and vanilla; spread over cookie crust. Arrange fruits on cream cheese layer as desired. Crushed pineapple makes a good filler. Melt preserves and drizzle over the top. May be served with whipped cream.
