2 or 3 c. chopped fruit - apples, blueberries, peaches, pears, pineapple or bananas 1 tbsp. vegetable oil 1 tsp. cinnamon or nutmeg CAKE: 2 tbsp. milk 1/2 c. fruit juice - apple, pineapple or orange 1 1/2 c. all-purpose flour 1/2 tsp. baking soda 1 tsp. baking powder To prepare topping, toss together fruit, oil and spice. Spoon mixture into an oiled 8 inch square casserole dish. To prepare cake, beat together egg, oil, milk and fruit juice. Add flour, baking soda and baking powder. Beat well. Pour batter over fruit. Smooth evenly. Bake at 350 degrees for 30 minutes. Cool until warm and turn out onto serving dish. Serve plain or with ice milk or light Cool Whip. Serves 4 to 6. |
