ITALIAN SAUSAGE AND BEAN SOUP
 

In a heavy soup kettle cook until done: 4 sweet Italian sausages

Remove sausages from the pan and pour off all but 2 to 3 tbsp. drippings. Dice and saute in drippings: 1 med. onion 1/2 green pepper 1 celery stalk

Slice sausages into thin pieces and return to pan.

Simmer and add: 1 lb. can stewed tomatoes 1 lb. can shell or fava beans

Season with: 2 tbsp. basil 1 tbsp. oregano 1/2 tsp. thyme

Continue to simmer for 20 minutes more. Serves 6.
